Idaho is literally famous for its potatoes, so when I heard there was a thing called an ice cream potato, I knew I had to try it. While Boise is Idaho’s capital, it is also home to the Westside Drive-In. Originally built in 1957 and opened by Ralph Caskey, it survived the decades and in 1994 was purchased by Lou Aaron. Born in Boise, he went on to train as a chef and worked in a variety of hotels before returning to Boise to elevate this local burger joint.



Chef Lou puts a sophisticated spin on American classics that has people raving, especially about the prime rib, and Monte Cristo. But the star of the show is the ice cream potato. Now, I know what you’re thinking, a dessert potato? Ew. But get this, there is actually no potato in it! It is simply vanilla ice cream molded into the shape of a potato and then covered in coco powder to emulate the skin, then topped with whipped cream and more to give the illusion of a baked potato! And, boy, is it tasty!
In 2009 Chef Lou’s credentials and food caught the eye of Food Network’s Guy Fieri, and the Westside Drive-In was featured on Diners, Drive-ins, and Dives. As with most of the locations featured on DDD, new customers flocked, and Chef Lou was able to open another location in 2012, which while still called the Westside Drive-In, it is much more of a classic diner. Fieri later returned to revisit the classic drive-in and stop by the second location.
